Expertise and philosophy of the domain - The cellar, winemaking and maturing |

Once the grapes have arrived in the cellar, we convert each type of vines and each terroir differently into wine and above all, according to the caracteristics of the vintage: |

A 2nd sorting is possible at the arrival in the cellars |

50 to 100% stalk removal in accordance with the quality of the grape stalk |

Separate mixing or winemaking of the varieties |

From 2 to 4 weeks of maceration with punching of the cap, release and more or less frequent overpumpings |

Monitoring and temperature control |

Splitting of free-run juice and press-juice |

The wines are going to be matured between 12 and 18 months |

Once the fermentations are done, wines are racked, blended, and are then going to be matured between 12 and 18 months, either in barrels, either in casks, which is rarer, or in cement vats before the bottling which will be done without fining nor filtration. There again, the characteristics of the wine and of the vintage are decisive. |

For the white wines, we make a direct pressing of the white grapes. The winemaking process takes place under controlled temperatures ranging from 18° à 20°C, 80% in vats and 20% in barrels.
We then work by stirring the wine on its lees until the bottling, which takes place in the next spring.
